Hi Rikki,
I've seen very few people use the side by side comparison feature in pivot tables. I think its an effective method of showing the relative importance of the individual items. Its just not very intuitive in Excel.
You might want to consider showing how to sort the data by percent. This change essentially creates a pareto analysis which could also be linked to a pivot chart.
